India’s zero-waste café changing kids’ eating habits forever!

At just 27, Nishtha Chauhan left her aerospace career to start something revolutionary - a zero-waste café called Café Aarambh in Gujarat. Rooted in her childhood experiences with millets and composting, the café blends nutrition, sustainability, and education. It now earns ₹12 lakh/month while changing how children view food.
Located in Ahmedabad’s Centre for Environment Education, Café Aarambh offers millet-based dishes like ragi dosas and bajra bhel, all served plastic-free in reusable or biodegradable packaging. It operates with a seasonal, limited menu to reduce food waste and carbon footprint.
But it’s more than just a café - it’s a movement. Over 2,000 children have attended its hands-on eco-workshops, where they grow herbs, prepare meals, and learn about composting and mindful eating. Many go on to start home gardens and change family habits.
In just four years, Café Aarambh has cut 47.3 tonnes of plastic and CO₂ emissions - equal to planting 2,300+ trees. With no external funding, Nishtha has built a purpose-led business that’s nourishing people, educating kids, and healing the planet - one millet at a time.
