Originating from the Basque region of Spain, this dessert skips the crust but delivers intense flavour and a texture that’s irresistibly creamy inside and golden-brown on the outside.

Here’s what you’ll need:
Cream cheese, sugar, eggs, heavy cream, vanilla extract, salt, and optionally a spoon of flour.
Steps:
Beat the cream cheese till smooth. Slowly add sugar, then eggs one by one. Pour in cream and vanilla and blend. Add flour only if you want a firmer centre. Pour the batter into a parchment-lined springform pan and bake at 200°C for 40–45 minutes. The top should be browned, and the centre jiggly. Let it cool, then chill for 4+ hours.

Pro tip: Serve cold for a firm bite or room-temp for that creamy texture.
