Mishti Doi, a traditional Bengali dessert, is a delicious blend of thick milk, caramelized sugar, and curd. Perfect for summer, this sweet curd not only satisfies your sweet tooth but also helps cool the stomach and aid digestion. Here's how to make it easily at home.
Start by boiling one litre of full-cream milk until it reduces to half. In a separate pan, caramelize one cup of sugar until golden brown and mix it into the thickened milk. Let the mixture cool until lukewarm. Add two tablespoons of curd and mix well.
Pour the mixture into an earthen pot, cover it, and leave it in a warm place for 7–8 hours to set. Once set, refrigerate it and garnish with saffron or raisins for extra flavor.
Enjoy this creamy, cool dessert as a post-meal treat or serve it at summer gatherings - it's a guaranteed crowd-pleaser!
