Born in 1932 at Nizam's near Calcutta's New Market, the kathi roll revolutionized fast food. Initially serving kebabs, Nizam's crafted the roll to cater to British officers seeking a mess-free meal. A flaky maida paratha, fried with egg, wraps succulent charcoal-grilled kebabs, beef, mutton, chicken, or kheeri seasoned with a secret marinade. Topped with onions, green chillies, and lime, it’s rolled in wax paper for easy eating.
Named after the bamboo “kathi” skewers introduced in 1964, the roll's authentic taste remains unmatched by imitators. Nizam's alu roll, with spiced mashed potatoes, is a vegetarian delight. While other cities offer variations like Bombay’s Frankie or North India's rumali roti roll, none rival the original's sturdy, flavorful perfection. Visit Nizam's or Park Street’s roll shops for a true taste of Calcutta's culinary jewel.
